Blue Salmon
    Ingredients
  • Salmon Fillet
  • Crumbled Blue Cheese
  • Spray Butter
  • Old Bay Seasoning
  • 1/2 to 1 cup Fresh Blueberries

    Directions
  1. Preheat oven to 450 degrees.
  2. Place a piece of aluminum foil wide enough to wrap around your salmon fillet on a cookie sheet.
  3. Spray butter on foil.
  4. Place fillet on foil and spray butter on top.
  5. Sprinkle Old Bay Seasoning on fillet.
  6. Add generous amount of blue cheese crumbles on top of fillet.
  7. Wrap foil loosely over fillet leaving some space so the top of the foil does not touch fillet or blue cheese.
  8. Place in oven and cook for 11 - 12 minutes, salmon should flake easily with a fork when it is done.
  9. 2 minutes prior to removing from the oven add 1/2 to 1 cup of fresh blueberries (based on preference).

Notes: This dish goes great with brown rice and a salad with raspberry vinaigrette dressing.
