Fresh Tuna on the Grill with Orange and Ginger
- In a bowl, combine marmalade, juice, ginger, oil, salt, pepper and powdered garlic. In oven-proof glass baking dish, place tuna in single layer and pour juice mixture over it. Let marinade for about 45 minutes.
- Pour out all but small amount of marinade. Preheat broiler and place tuna under broiler or grill and cook thoroughly 4 to 5 minutes on each side.
- Heat remaining marinade until it bubbles. Pour over tuna and sprinkle with chopped scallions, just before serving.
