Multi-Grain Fruit Muffins

  • 1 Bag Minute Rice Multi-grain Medley, uncooked
  • 1 cup Apple Juice
  • 1 Egg, lightly beaten
  • 11/2 cups Vanilla Soy Milk
  • 1 tablespoon Agave Nectar
  • 1/2 cup Dried Fruit, chopped
  • 2 cups Gluten-free Baking Mix
  • Non-stick Cooking Spray

  1. Directions:
  2. 1. Preheat oven to 425°F.
  3. 2. Prepare rice according to package directions, but substitute apple juice for water. Allow rice to cool.
  4. 3. In a bowl, combine egg, milk, and agave nectar. Stir in cooked rice and chopped dried fruit. Fold in baking mix.
  5. 4. Blend just until combined.
  6. 5. Coat a 12 cup muffin tin with non-stick cooking spray. Divide batter into cups and bake 20 minutes or until golden brown.

  8. • Try variations of these muffins by using different types of dried fruit or substituting honey for agave nectar!
