Quinoa Avocado Spinach Power Salad

  • 1 cup Dry Quinoa (full circle)
  • 2 Avocados
  • 3 ounces Baby Spinach (full circle)
  • 8 ounces Cherry Tomatoes
  • 3 Green Onions
  • Dressing:
  • 2 Gloves Garlic, minced
  • 2 tablespoons Red Wine Vinegar
  • 2 tablespoons Olive Oil (full circle)
  • 1/8 teaspoon Salt

Add Ingredients to Shopping List

  1. Cook quinoa according to package directions.
  2. In a small bowl, whisk together dressing ingredients and set aside.
  3. Roughly chop spinach and place in large bowl. Slice green onions, halve the cherry tomatoes, and dice the avocado.
  4. Add cooked quinoa to large bowl with spinach and toss. Add green onions, tomatoes and dressing. Stir to combine.
  5. Add avocado and lightly toss. Serve immediately or refrigerate.
