Chicken with 40 Cloves of Garlic

  • 3 Whole Head of Garlic, about 40 cloves(minced)
  • 5 pounds Red Bud Farms Chicken Breast
  • 1 tablespoon Unsalted Butter
  • 2 tablespoons Extra Virgin Olive Oil
  • 3 tablespoons Cooking Sherry
  • 1 1/2 cups White Cooking Wine
  • 1 tablespoon Fresh Thyme Leaves
  • 2 tablespoons All-purpose Flour
  • 2 tablespoons Heavy Whipping Cream
  • Salt and Pepper to Taste

  1. Dry chicken breast with a paper towel to help the cooking proces
  2. salt and pepper the chicken breasts
  3. add butter and oil into a large sauté pan or dutch oven and cook on a medium heat
  4. add chicken breast and brown both sides, this should only take a few minutes
  5. transfer the chicken to a clean plate and set aside
  6. add all of the garlic to the pan that you removed the chicken from and cook for 5 to 8 minutes stirring briefly until golden brown
  7. Add the sherry and white wine to the pan and bring to a boil, be sure to scrape the sides of the dish to ensure that you capture all of the flavor from the garlic
  8. Return the chicken to the pan and all remaining ingredients and cook on low for 30 to 45 minutes or until the chicken reaches an internal tempature of 165°.
