Potatoes with Garlic and Chilies

Spicy Indian version of French Fries (not deep fried)
  • 3 to 4 Potatoes, peeled and washed
  • 3 tablespoons Cooking Oil
  • 1/2 teaspoon Mustard Seeds
  • 1/2 teaspoon Cumin Seeds
  • 4 Cloves Garlic, minced
  • 1/4 to 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Ground Tumeric
  • 1 teaspoon Salt (or to taste)

  1. Cut potatoes to the thickness of French fries, but half their length.
  2. Use a large nonstick skillet. Heat oil over medium heat. Then add the mustard seeds and cumin. When the seeds start popping, add the garlic and allow this to brown lightly.
  3. Remove the pan from heat and add the chili powder, turmeric and potatoes and place the pan back on the heat. Stir and turn heat to medium.
  4. Add the salt, stir and mix, cover the pan, cook for 3-4 minutes and stir again. Continue to do this until all potatoes are cooked and lightly browned.
  5. Remove fom heat.
