EATING WELL ON CAMPUS


Great tasting meals can certainly be prepared in a gourmet kitchen, but they can also be prepared in your dorm room. What you need is a little creativity, a few gadgets, some standard ingredients, and several reliable recipes to produce everything from simple lunches to awesome dinners.


Kitchen Essentials
  • 2 Microwave-safe mixing bowls(1 small, 1 large)
  • 9"x9" baking dish
  • 2 sharp knives, 1 small, 1 large
  • measuring cups and spoons
  • small cutting board, 1 wooden spoon, 1 rubber spatula
  • can opener, bottle opener
  • aluminum foil, plastic wrap, zip lock bags
  • potholder, colander
  • paper plates/bowls, paper towels, plastic utensils
  • Clorox wipes for clean up, dish soap
  • microwave oven and small refrigerator/freezer
Nice to Have but not Essential
  • toaster oven
  • coffee maker
  • George Foreman Grill
  • blender (regular size or individual size)

  • eggs, margarine, low fat mayo, salad dressing, spray oil
  • yogurt, string cheese, pre-shredded cheese, cottage cheese, skim milk
  • tortillas, hummus, peanut butter
  • baby carrots, fresh fruit
  • frozen dinners, bag of frozen fruit (smoothies), frozen packs of veggies
  • boxed rice and pasta dinners, dry cereal, instant cereal, bagels, bread
  • vegetarian refried beans, salsa
  • to-go tuna packs
  • canned soups like minestrone, vegetable, tomato, lentil
  • 1-2 baking potatoes pre-wrapped in plastic for microwave
  • dehydrated soups
  • plain microwave popcorn
  • whole grain crackers
  • tea bags, coffee
  • canned fruit in pop-top cans, applesauce in cups
  • whey protein powder (fruit smoothies)
  • sports bars for quick meal replacements
  • small cans of V-8 and fruit juice
  • raisins, nuts, dried apricots
How to Cook a Potato in the Microwave Oven
Scrub potato and pat dry if not pre-wrapped. Prick the potato several times with a fork. Place potato on a paper towel in the center of the microwave. Microwave on high for 6-8 minutes. Take out and wrap in plastic (if not already wrapped) and let finish "cooking" with its own heat for 5 minutes. Ready to slice open and enjoy with your favorite toppings!
